Cheers Dick,
The valve seat on the exhaust side isn't exactly flat, more U shaped. Getting the valve seats recut next week.

Update: the heads at the shop, hopefully back before the weekend. New inlet valves arriving today and measured the shims last night, will also catalogue the ones on the broken head. I'm guessing the majority will be too thick but there seems to be plenty of Ford spares on the bay.

Chris take your time lap the valves in with a fine paste and use a bit of paraffin to lub it up as you do it , the hand stick is the way to go , with the seats cut and good valves it should take you only a few minutes per valve. dont do this with valve seals on. Once all done then clean it up reseal and fit the springs . No short cuts .

Definitely much easier to get a good result like this, will be putting the seals and springs etc in tonight

When you shim up remember only do one cam at a time as the valves will touch if cams out of time with each other. Wind cam over a good few times as well to settle the the things down

So the shim scores on the doors are below, looks like I need 10 new shims. I've had a quick look on the bay but can see the sizes I need so will be making a call to Ford on Monday, hope they're not too pricey

Re: Man with spanners - thinks he's a mechanic
Part of the problem I had yesterday was on the exhaust side I couldn't actually measure the gap as it was below 0.04mm so I, ahem, made a shim small enough. I was quite surprised that even taking a very methodical approach it was still nowhere near flat with a variance of about +/-0.02mm across it's surface! But I was able to calculate its effective width and use that to get a better idea what I need. I still think that I'll not get this right on the first attempt, but that's what you get with amateurs!!!
So new exhaust scores on the doors:
And yes I did have to do each valve in turn, taking the cam shaft off each time, correctly and correctly re-torquing it back on!

Yes its a crap job but its something you only want to do once . You soon get in the swing of it. Good news is the shims are not expansive from reputable people
