Escorts as mentioned. No cropping, dropped into lightroom used their auto preferences and used a preset to make them "pop" a bit. Last one of "101" filled the frame, probably too much, but not often I get the whole car that big in shot, lol.

No easy answer David.. a number of options.
Using a hop up or small stepladder is common, I use a hop up, doubles as a good seat.
Familiarity with the circuit helps, you get to know your favourite spots. The Escort and other panning shots were taken at the inside of Druids. The fence is waist high.
I check on line, you sometimes find a blog or similar with a bit of a guide someone's put together. I search for images taken at the circuit as well and work out positioning, angles etc. You can see the metadata for images which helps also.
Keep an eye out for other togs and the direction they are pointing their gear at. There is only a couple of sweet spots, to stand at, missing all the trackside furniture for Paddock bend. even today another tog was there.
I also alter the setting on the camera to "loose" the fence, by opening up the aperture. Works well with the wire type fence on static shots, less so with panning shots but you can get away with it. My favourite shot of the day was taken through the fence, car number 14 in the first batch I posted, along with the two subsequent shots.
Last option and the holy grail is to blag a media pass for access trackside, working on this one lol
Apologies for the long answer to a short question..
