No-one's mentioned a Quantum Coupe, which have 4 seats & a roof or 2+2, which has a small rear seat, an excellent soft top & can be had with a hard top. Also "fun" in a different way is the soft top Rickman Ranger. Not a performance car & you'll struggle to get 30mpg, but rear wheel drive & easy to work on.

Has to be beach buggy with a manx style hardtop and then upgrade to imprezza turbo engine if powers on your list
